
LEMON BASIL PASTA
1/2 lb angel hair pasta
3/4 tsp garlic salt
2 T margarine (melted)
1/4 tsp fresh ground black pepper
1 T lemon juice
1/4 c grated Parmesan cheese
1 1/2 tsp basil
Cook pasta. Drain and return pasta to pan. In a small bowl, combine garlic salt, margarine, pepper, lemon juice, and basil. Toss with cooked pasta. Sprinkle cheese over pasta and serve immediately. (Main dish variation: Toss in 2 c cooked, cubed chicken or 1 lb cooked large shrimp before adding cheese.)
And, if you're like me, the last thing you need after a candy filled Easter weekend is another dessert/treat recipe. But these are so good, and they have peanut butter in them, so they can't be all bad, right?

BUTTERSCOTCH HAYSTACKS
1 cup butterscotch chips
1/2 cup peanut butter
2 1/2 cups chow mein noodles
Melt butterscotch chips and peanut butter in a small bowl in the microwave. Add chow mein noodles and mix well. Drop by the spoonful onto waxed paper and let cool.
(If you want to do the nests like I did, wait a few minutes after dropping them onto the waxed paper, then form them into more nest-like shapes and add 3 Cadbury mini eggs to the middle of each one.)
